Chicken Marsala
Ingredients:
- ½ box angel hair pasta
- 1 lb boneless skinless chicken breast
- ¼ tsp pepper
- ¾ tsp salt
- ¾ cup flour
- 4 tbsp butter or margarine
- 1 tbsp oil (olive oil is best)
- 1 cup thinly sliced Portobello mushrooms
- 1 clove garlic
- 6 tbsp dry Marsala wine
- 2 tbsp of grated parmesan cheese
- 2 tbsp of chicken stock
Directions:
Boil water for pasta. Cut chicken breasts into 8 pieces; pound them about ¼ to ½ inches thick. Place them in a Ziploc bag with flour, salt and pepper and shake to coat well, shake off any excess.
In a hot skillet melt 3 tbsp of butter and fry the chicken about 5 minutes each side, until cooked through. Arrange chicken in an oven-safe dish and place in the oven at about 275 degrees to keep warm. Angel hair pasta cooks very quickly, so at this point, start cooking the pasta according to the directions on the box.
Add 2 tbsp of butter to the same skillet and add the garlic, do not let the garlic brown just cook until soft. Add the mushrooms and saute them. Remove the mushrooms and arrange on top of the chicken; put the grated parmesan cheese on top of the chicken and mushrooms and place back in the oven.
In the skillet, place the remaining 1 tbsp of butter, the marsala wine and the chicken stock, turn up to high to achieve a rapid boil and cook until the sauce is reduced by about half. Serve the pasta along with bread, and you have a perfect Valentine’s Day meal.
